Peppery Sweet Potato Sage Soup
Yo no he seguido todas las medidas de los ingredientes, pero el resultado es espectacular!!!
Super bueno!
Aquí os dejo la recetilla que he consultado.
Makes 6 cups
2 tablespoon butter
1/2 cup celery, diced
1/2 cup onion, chopped
2 garlic cloves sliced thin
4 cups chicken broth
4 cups sweet potatoes, peeled, diced 1/2-inch
2/3 cup heavy cream
1/4 cup fresh sage leaves, finely chopped
1-1/2 teaspoons salt
2 teaspoons cracked black pepper coarsely ground
1/2 teaspoon freshly grated Nutmeg
fresh sage leaves for garnish
In a large saucepan over medium heat sauté celery, onion and garlic in butter until tender; add broth and potato; bring to a boil, cover, lower heat to a simmer, continue cooking for 5 to 10 minutes or until sweet potatoes are soft.
Transfer potato mixture to a food processor and puree until smooth then return to the saucepan; add cream, finely chopped fresh sage leaves, salt, 2 teaspoons cracked pepper and freshly grated nutmeg. Garnish this wonderful tasting potato mixture with fresh sage leaves and serve.
